Webapps: 3rd party apps? Sorta.

In the closest official Apple solution to get third party applications on your iPhones and iPod Touches, Apple has been encouraging developers to make webapps, which are kind of like applications that run in the Safari browser of your device. They don't have the horsepower or ease of use that real applications do, but they do work as a temporary solution for now and most of them work very well. There are already a ton of them released, so iPod Touch owners should check that out if they haven't already.
